Vegetable Biryani Recipe:
- NutMeg – A pinch
- Cardamoms – 4
- Pepper Corn – 1/2 tsp
- Cloves – 5
- Cinnamon Stick – Small
- Saunf – 1/2 tsp
- Stone flower – 1/2 tsp
To make a fine Paste:
- Mint Leaves – Handful
- Coriander Leaves – Handful
- Ginger – 1 inch
- Garlic – 6 small cloves
- Green Chillies – 2
- Onion – 1 large chopped
- Vegetables (Carrot, Beans, Cauliflower, Peas) – 2 cups chopped
- Basmathi rice – 2 cups
- Water – 3 1/2 cups
- Oil – 3 tablespoons
- Turmeric – 1/8 tsp
- Red Chilli Powder – 1/4 tsp
- Tomato – 1 medium
- Yogurt – 1/2 cup
- Rose water – 1 tsp
- Salt – As Needed
How to cook Veg Biryani:
Rinse the rice and soak them in water for 20 to 30 minutes. Take the spices to be powdered and prepare a dry powder using them. Set these aside.
Take a blender jar and blend ginger, garlic, coriander, mint, and onions into a fine paste and set it aside.
Now take a pan or Pressure cooker and heat 3 tablespoons of oil in it. Then add the dry spices into the heated oil.
Once the spices began to sizzle, add the green paste prepared earlier and fry them until the raw smell goes off.
Now add the yogurt, chili powder, tomatoes, salt, and turmeric. Cook them until the tomatoes turn mushy.
Once the oil begins to separate from the mix, add the dry powder prepared in step 1. Mix them well.
Add the chopped vegetables into the mixture. Mix them well.
Saute them for 3 to 4 minutes on a medium flame.
Pour 3 1/2 cup of water into the veggies mix. We have already added salt while adding the tomatoes. So add a little amount of salt now. Let the water to boil.
Soaked rice should be drained completely. Now add the rice to the boiling water. Add the rose water during this process.
Cover it with a tight lid. Turn the flame to medium and cook until the rice is done. Once it is cooked, stir well and cover the lid again. Let it be undisturbed for 10 to 15 minutes.
Hot and delicious Vegetable Biryani is ready to be served.
