Stuffed Bhindi is a no onion and no garlic recipe, it is just made with Bhindi, spices, oil, and salt. It is an easy and spicy bhindi recipe. I used different spices like dry mango powder, coriander powder, red chilli powder, turmeric powder, and cumin powder to make the masala. I used dry mango powder to make the bhindi tasty and sour, the other spice powders like turmeric, cumin, and coriander powder also contribute their tastes and flavours to the recipe. This is not a very spicy recipe as I used only 1 tsp of red chili powder and I didn’t add garam masala powder but if you want the bhindi spicy then you can add some garam masala powder to the recipe.

Stuffed Bhindi can be served as a side dish with rotis, dal rice, or curd rice. This Stuffed Bhindi can also be served as an appetizer. It will take an hour to prepare this recipe, as rinsing the bhindi, drying and then stuffing masala into the bhindi will take some time. During summers I usually make light veggie dishes, this recipe is one such light veggie dish.

Instructions
  1. First, rinse the bhindi in water, drain and keep it aside.

  2. Next, in a bowl add dry mango powder, coriander powder, red chili powder, turmeric powder, cumin powder, and salt. Mix well and keep aside.

  3. Next, cut the base and the head of the bhindi using a knife and then gently make a slit on the bhindi. Keep in mind the bhindi should not break into 2 parts. Using a spoon or with your hands stuff the masala in the bhindi.

  4. Next, in a pan or kadai heat 2 to 3 tsp oil and then add stuffed bhindi to the oil. Stir often and cook the bhindi on a low flame.

  5. Serve the Stuffed Bhindi with raita, yogurt, or with rotis. You can also serve it with a combination of rice and dal.
