Red Coconut Chutney: This is a Kerala style red coconut chutney for dosa and idli. Always have some grated coconut in the fridge, so that whenever you are in a hurry you can easily make chunetys like this. Adding red chilies and onions, add an extra taste and flavor to the recipe. As adding red chilies gives a spicy and smoky flavor to the chutney, you can increase or decrease red chilies as per your taste. If you have green chilies then you can add green chilies instead of red chilies.
Red Coconut Chutney goes well with all South Indian tiffin and snacks. You can serve this chutney with dosa, idli, uthappam, and medu vada. This chutney also looks attractive with a bright red color. I also posted few other chutney varieties, you can check that too.

Red Coconut Chutney: This is a Kerala style red coconut chutney for dosa and idli.
For tempering the chutney
In a grinder, take tightly packed grated coconut, chopped shallots or sambar onions, dry red chilies, chopped ginger. If you don't want the raw taste of red chili then roast them lightly in a pan or saute them with coconut oil, You can also add garlic if you want.
Next, add salt and water.
Next, take chutney in a bowl and keep aside.
In a small pan, heat coconut oil.
Next, add mustard seeds and let it crackle.
Next, add urad dal(husked black gram).
Fry the urad dal until maroonish golden.
Next, add curry leaves and chopped shallots or sambar onions.
Saute and stir until the shallots or sambar onions turn lightly golden.
Next, add the tempering mixture along with oil to the red coconut chutney.
Serve the red coconut chutney with dosa, uthappam, idli or medu vada.
