Paneer Barfi is a simple recipe, it can be prepared easily with paneer or cottage cheese, cream, and condensed milk.
Take a pan and add sweetened condensed milk, grated paneer, and cream.
Mix all these well and keep it on a stove top on a low flame.
Start cooking and stir often.
The mixture will start thickening, stir often so that the mixture won't get stick to the bottom of the pan.
Add a pinch of saffron and cardamom powder when you see the mixture leaving the sides of the pan.
Continue cooking for few more minute may be 2 minutes, don't overcook it then the paneer barfi will turn dense and chewy.
Next, add rose water or rose essence.
Mix well so that the rose water evenly spreads in the mixture.
Next, take a tray greased with 1/2 tsp ghee and spread the paneer barfi mixture evenly.
Next, top it with pistachios and almonds. Press these with your fingers lightly on the barfi.
Let the paneer barfi cool and then slice them.
Serve the paneer barfi immediately or refrigerate it.
