Paneer Palak Recipe:
- Paneer – 1 cup heated
- Palak – 2 cups
- Green Chillies – 2 to 3
- Onions – 3/4 finely chopped or 1/2 cup paste
- Tomatoes – 1/2 cup or puree
- Kasuri Methi – 1/4 tsp
- Coriander powder – 1/2 tsp
- Cumin powder – 1/4 tsp
- Garam Masala – 1/2 tsp
- Ginger Garlic Paste – 1/2 tsp
- Cinnamon stick – 1 inch
- Green Cardamoms – 2
- Cloves – 2
- Cumin – 1/8 tsp
- Oil or butter – As needed
- Fresh Cream – 2 to 4 tbsp
- Salt – As needed
Wash palak on a large pot filled with water. Here we have added vinegar and salt to remove the pesticide residue. Drain the water completely.
It is an optional step. Heat a pan with one tsp of oil and saute paneer in it. You can also add the paneer in hot water for 15 to 20 minutes to soft the paneer.
In the same pan, heat one tsp of oil on a medium flame. Saute green chilies and palak along with this.
Switch the stove off when the leaves wilt off. Cook for 2 to 3 minutes only, do not overcook the spinach.
Once cooked, cool them completely and add it to a blender jar along with the green chilies. The number of green chilies depends on the spice level you require.
Blend them into a smooth paste.
Take a pan and heat oil in it. Add cumin, cloves and green cardamoms to it and let it to sizzle.
Add the chopped onions and fry until they turn into golden color.
Then add the ginger garlic paste and saute until the raw smell goes off.
Add the chopped tomato or the tomato puree to it and stir them. Add salt along with this.
When the tomatoes turn mushy, add garam masala, Kasuri methi, and coriander powder.
Saute them until the masala gives out the good aroma, and the masala leaves the sides of the pan.
Add half a cup of water to it and heat them on medium flame.
When the gravy thickens, add the palak puree. Lower the flame completely.
Cook it just for 2 minutes until the gravy gives out bubbles. Do not cook for a long time.
Now add the fried paneer and switch the stove off.
To make a creamy paneer palak add a cup of cream or almond milk or cashew milk. This step is optional.
