Take mutton in a bowl and wash them in running water and drain the water completely. Marinate the mutton with yoghurt, turmeric, ginger garlic paste, Chilli powder and salt. Refrigerate the marinated mixture and keep it aside for at least 2 hours. For smooth meat, you can refrigerate it overnight.
Take a pressure cooker or a pot and heat it with the oil. Once the oil gets heated add cinnamon and cardamom to the oil.
Now add the onions and the green Chilli slit to the oil and stir them.
Saute the onions until it turns golden in colour.
Turn the simmer to low and the marinated mutton meat to the onions. Keep the flame low and make sure not to burn the mixture.
Saute and stir the mixture for about 5 to 7 minutes. Onions should mix evenly with the meat.
Cover the pot and cook for 10 minutes. Stir the mixture frequently.
The mutton meat will release the moisture from it while heating.
Add the Chilli powder and the mutton masala to the mixture. The curry gets the flavour from the masala. Hence use a masala of your choice. Stir the mixture. Saute them for 2 to 3 minutes.
Add curry leaves as it adds a great aroma. Fry them for another 2 to 3 minutes.
Now you will find the oil begin to separate from the mixture.
Now add tomato puree to the mixture. You can increase or decrease the quantity of the tomato puree depending on your taste.
Saute until the raw smell of the tomatoes goes off.
Once the raw smell is gone, add water and stir the mixture. Cover and cook it on the medium flame for 2 to 4 whistles (Depends on the size of the piece).
Once the pressure goes off, Stir the curry and add coriander leaf for garnish.
