For the Beans:
- Dried Beans – 8 Ounces
- Salt – To taste
- Onion – 1 Medium
- Carrot – 1 Medium
- Celery Stalks – 2
- Garlic – 3 medium cloves
- Rosemary – 1 large sprig
- Parsley – 2 to 3 sprigs
- Bay leaf – 1
For the Soup Base:
- Olive oil – 2 tablespoons
- Onions – 1 medium finely chopped
- Carrot – 1 medium, peeled and finely diced
- Celery Stalks – 2 chopped
- Fresh Rosemary leaves – 1 tablespoon
- Garlic – 2 Medium cloves minced
- Roma Tomatoes – 1 pound peeled and chopped
- Pasta – 1 cup dried
- Zucchini – 1 Medium cut into bite-sized pieces
- Summer Squash – 1 Medium cut into bite-sized pieces
- Green Beans – 4 ounces
- Spinach – 4 ounces roughly chopped
- Black pepper – freshly grated
How to make the recipe:
Beans are the backbone of this soup. Take a half pound of beans in salted water overnight drained in a bowl.
Add the onions, carrot, couple stalks of celery, a couple cloves of garlic, a sprig of rosemary along with a sprig of fresh parsley.
Then add water and cover it all with water. Season them with a pinch of salt.
Add a bay leaf and mix them together. Cook them for about 45 minutes.
Once the beans are cooked, discard the veggies out of it and reserve the bean water.
In a separate bowl, add 2 tablespoons of extra virgin olive oil.
Add the chopped onions, carrot, diced celery and fresh rosemary to the oil and mix them together.
Then add 2 cloves of minced garlic to it.
Mix the garlic and then add a pound of peeled, seeded and chopped tomatoes.
Season it with salt and pepper and cook them on a medium flame for 8 to 10 minutes.
Then add the beans along with the water.
Add 3 and a half ounces of dried paste to it.
Then add a handful of chopped green beans, summer squash and Zucchini to it. Mix them together.
Add 3-4 ounces of roughly chopped greens and let it cook.
Once done season them fresh herb sprinkles on the top. Tasty and delicious Minestrone Soup is ready.
