How to cook Fish Biryani:
Rinse the rice with water and soak them for 15 to 20 minutes. Then cook the rice in 4 1/2 cup of water until it is 90 % cooked. While cooking the rice, marinate the fish with ginger garlic paste, tomato puree, Biryani masala, turmeric, lemon juice and salt as needed. Marinate the fish and set it aside.
Heat one tablespoon of oil in a pan and add the fish. Fry on both sides of the fish. It might take around 7 to 10 minutes depending on the size of the fish. Take care not to burn the fish or the marinate masala.
Once the fish is fried set it aside and add 3 tbsp of oil and start frying the onions. Stir often to evenly fry the onions.
Brown the onions lightly and take few onions and set them aside for garnishing.
In the remaining onions add the dry spices and fry until they begin to sizzle.
Then add the ginger garlic paste and saute until the raw smell of ginger garlic goes off.
Add the spice powders during this step along with a pinch of salt and stir them.
Add 3/4 cup of Yogurt once the masala is mixed.
Cook on a medium flame until the masala gets thicken. Once it is done, keep it aside.
Take half of the cooked rice in a cooker or a pan.
Layer the gravy over the rice and sprinkle few coriander leaves and mint leaves over it.
Place the fried fish over the gravy.
Now layer the leftover rice over the fish and garnish them with the fried onions, mint and coriander leaves. Add a tsp of kewra water.
