Pasta is a staple food of traditional Italian cuisine. Pasta is available in the market in varies shapes and sizes. Usually, pasta is made from wheat flour mixed with water or eggs.White sauce pasta is a very simple recipe, can be made at home with simple ingredients.
In the white sauce pasta recipe, you can add any vegetables like onion, broccoli florets, baby corns, mushroom, and much more. The entire part of white sauce preparation has to be done in low flame to get the perfect white sauce.
- 3/4 cup of Pasta
- 1/2 cup of sweet corn kernels, boiled
- 1 small carrot peeled and finely chopped
- 1/2 green bell pepper, finely chopped
- 1/2 red bell pepper, finely chopped
- 1/2 cup peas boiled
- 2 tablespoon butter
- 1 tablespoon Maida/ Wheat Flour
- 1 1/4 cup full-fat milk, boiled and cooled
- 1/4 teaspoon pepper powder
- 1/2 teaspoon red chili flakes
- 1/4 teaspoon dried oregano or basil or thyme
- 2 tablespoon Cheese (Optional)
Method of Preparation
To begin making white sauce pasta, you need to start by cooking pasta. Place a large pot with plenty of water along with little salt, on a stove and let it boil.
Once the water begins to boil well add pasta (here used is penne pasta) and few drops of oil and cook until it’s done. Don’t cook different sizes or two types of pasta in the same pot of water; they will finish cooking at different times.
Do not overcook the pasta; it will get mushier if you cook it for a longer time. Check whether it is ready and drain pasta from the water and reserve the stock water. Set aside the boiled pasta.
White Sauce Preparation Method
Place a pan on the stove and add 1/2 tablespoon of butter. Add the chopped green and red bell pepper, boiled sweet corns, peas, and chopped carrots and saute for few minutes. Remove the vegetables to plate.
Set the flame on low and in the same pan, add 1 1/2 tablespoon of butter and melt it. Now add 1 tablespoon of Maida/wheat flour and whisk well until the raw smell goes off. The flour may slightly turn lump, so just break the lumps and continue to saute it until it has no raw smell. Make sure the flour does not change its color.
Add 1/4 cup of milk to the flour and stir well continuously to break up the lumps. Once the flour is mixed well with the milk without forming any lump, add the rest of the milk and mix well.
The mixture will start to thicken and at this stage add red chili flakes, pepper powder, oregano, and salt. Gently stir the sauce to get a thick sauce consistency. Now your white sauce is ready to get mixed with pasta.
White Sauce Pasta
Add the sauteed vegetables and cooked pasta to the prepared white sauce and mix well. Add more salt and more dried herbs if needed.
If you are adding cheese, add it at this stage and mix well until the pasta is coated with the creamy sauce. You can add 1 or 2 tablespoons of reserved hot pasta cooked water if the sauce is too thick.
White Sauce Pasta is ready to serve hot.
