Coconut Rice Recipe | How to cook Coconut rice: It is one of the favorite South Indian recipes. This Vegetarian Recipe is easy to cook and tastes very delicious. Here is the method to cook the tasty coconut rice recipe.
Coconut Rice Recipe:
- Rice – 1 cup cooked
- Coconut – 1/2 cup grated
- Salt – As needed
- Green Chillies – 1 slit
- Red Chilli – 1 broken
- Ghee or coconut oil – 1 1/2 tbsp
- Mustard – 1/2 tsp
- Cumin – 1/2 tsp
- Hing – A pinch
- Chana Dal – 3/4 tbsp
- Urad Dal – 3/4 tbsp
- Ginger – 1 tsp chopped
- Cashews or peanuts – As needed
- Rinse a cup of rice in running water twice and soak them for 10 to 15 minutes. Then cook the rice in a pot or pressure cooker. Once cooked, keep it aside until u prepare the rest.
- Take half coconut and grate them. Coconut is the main ingredient in this. Make sure to use fresh coconut. Grate a half cup of coconut and keep them aside as well.
How to cook Coconut rice:
Take a pan and add 1 1/2 tbsp of ghee or oil to it. Then add the mustard, cumin, dals and cashews. Fry them until the dals turns golden in color. Then add the chopped ginger, green chilies, red chilies and curry leaves into it. Saute them until the leaves turn crispy. Now add a pinch of Hing to it.
Then add the grated coconut and rice to it. If you like fried coconuts, first add the coconuts and fry them for 2 to 3 minutes and then add the rice. While adding the rice, add few pinches of salt as well. Salt can be added as per your need.
Mix everything well and switch off the stove. Check the salt and adjust the taste if needed. Make sure to mix the rice well with the coconuts.
Serve the coconut rice hot for breakfast or dinner.
