- Rice – 1 1/2 cup
- Chicken – 200 g
- Salt – As needed
- Garlic – 1 tablespoon chopped
- Soya Sauce – 1 tbsp
- Vinegar – 1 tbsp
- Chili Sauce – 1/2 tbsp
- Pepper Powder – 1/4 tsp
- Oil – 2 tbsp
- Star Anise – 1 small
- Strand mace – 1 (Optional)
- Onion – 1 medium
- Bell Peppers – 1/2 cup chopped
- Carrot – 1 chopped
- Peas – optional
- Sprig Celery – 2 to 3
- Take the rice in a bowl and soak them for 20 minutes. Then drain the water and cook the rice in a pressure cooker.
- Once the rice is cooked, Keep it aside until you prepare the rest.
How to cook Chicken Fried Rice:
Take a pan and add 1 tablespoon of oil. Then add 200g of cubed chicken to it.
Cover and cook the chicken. Make sure not to burn the chicken.
While the chicken is being cooked, take a bowl and add the soy sauce, chili sauce, pepper powder and vinegar in it. Set it aside until the chicken cooks.
The chicken will be cooked with a little stock left.
Pour the sauce which was prepared earlier into the chicken along with the stock. Cover and set it aside. Keep it covered for some time until the sauces are absorbed by the chicken.
Now add oil to a pan and heat it. Add the garlic and fry them. Then add the onions and star anise along with the strand of mace. It adds flavor to the chicken fried rice.
When the onions turn golden in color, add the chicken along with the sauces. Cook until the sauce thickens.
Add the cubed capsicum now and toss everything well. Cook until the capsicum is half done.
Now add the cooked rice to it and sprinkle little salt and pepper over it. Add salt and pepper to suit your taste.
Mix the rice along with the chicken sauce together and stir for 3 to 4 minutes.
Hot and Tasty Chicken Rice is ready.
