Asparagus Soup Recipe | Asparagus soup without Cream: Cream of asparagus soup is a soup prepared with the asparagus, stock, and milk or cream as primary ingredients. Here we are going to prepare soup without the cream.
Asparagus Soup Recipe:
- Olive Oil – 2 tablespoons Extra Virgin
- Leek – 1 large finely chopped
- Fennel Bulb – 1 trimmed and thinly sliced
- Salt – As needed
- All purpose flour – 2 tablespoons
- Homemade stock – 4 cups
- Asparagus – 2 Pounds cut into bite size
- Tarragon leaves – Handful minced
- Lemon Juice – 2 tablespoon
- Black Pepper – Few pinches
How to make Asparagus Soup:
Take two tablespoons of extra virgin olive oil in a pan and heat it.
Take a large leek and chop them along with chopped Fennel Bulb. Sprinkle few amount of salt over the veggies.
Salting vegetables draw out moistures to help them sweat. Mix the well.
Cook the vegetables until they tender. Don’t let the veggies to brown.
Add 2 tablespoons of all-purpose flour into the veggies and mix them as well.
Then pour four cups of homemade stock into vegetables and let it boil.
Once the liquid starts boiling, add the chopped asparagus into it. Mix them together.
Then add a handful of minced Tarragon leaves in it.
Simmer until the veggies get tender for about 5 to 6 minutes.
Then add a tablespoon of lemon juice to it and mix them together.
Take an impression blender and start blending the veggies to a fine paste.
Sprinkle few pinches of salt and pepper to it and mix them together.
Season it with Asparagus, Tarragon leaves, cream (This is optional), and a few drops of olive oil. Delicious Asparagus soup is ready.
