Fried Rice is a popular Chinese dish that is well known and favorite to many. Mostly, many people would have tasted fried rice once in their lifetime. Whenever we order an Indo-Chinese menu, then surely fried rice will be present in it.
Fried rice can be prepared using chicken, mushroom, egg, vegetables, etc. But veg fried rice is the best way to include veggies in your kid’s diet plus they will love to eat it. Chinese restaurants serve veg fried rice that often tastes different from one to other. Ajinomoto and olive oil are the two main ingredients used in common fried rice recipe.
Ajinomoto gives a different taste and flavor to the rice and dominates every other ingredient that is used. As few people concern about Ajinomoto as not good for health, here the recipe is given without adding Ajinomoto. Good fried rice can also be made without adding it. List of Veggies that can be used
You can use any of your favorite veggies like beans, bell pepper, cabbage, carrots, corn, baby corn, mushroom, peas, and spring onions too. Shredded cabbage gives you a unique flavor to the fried rice relating to the flavors of a restaurant one. But if you don’t like cabbage you can avoid it.

Veg Fried Rice Recipe
- Olive Oil – 2 tablespoon
- Garlic – 1 tablespoon
- Carrots Finely Chopped – 1/4 to 1/3 cup
- Bell Pepper/ Capsicum Finely Chopped – 1/4 to 1/3 cup
- Beans Finely Chopped – 1/4 cup
- Cabbage Chopped – 1/4 cup
- Spring Onions Chopped – 1/4 cup
- Sugar – 1/4 tablespoon
- Soya Sauce – 1 tablespoon (or) 2 to 3 teaspoon
- Vinegar – 3/4 to 1 tablespoon
- Crushed Pepper – 1/2 teaspoon
For Cooking Rice
- Basmati Rice – 2 cups
- Water – 4 cups
- Green Chilly – 1
- Celery – 8 to 10 Leaves
- Mushrooms – 1/4 cup
- Star Anise – 1
Method of Preparation
Wash rice well in water and soak it for at least 10 to 20 minutes. Cook rice in water with few drops of oil in it. Rice has to be cooked to a consistency where the grains must be separated but not mushy.
Drain off the rice using a colander and keep it separate in a plate and let it cool.
Heat oil in a pan. For cooking fried rice the flame has to be on a high till the cooking completes. Add chopped garlic and saute till you get the garlic aroma. If you wish to add star anise, add it at this stage and fry for a minute.
Add all chopped veggies like the carrots, bell pepper, beans, cabbage, spring onion in the oil. To avoid the veggies from changing color, add sugar at this stage and fry it for 2 minutes. If you want crunchy bell pepper then add it at the next step.
After that add soya sauce, vinegar, and salt. If you wish you can also add red chilly sauce. Take care while adding salt as the sauces already have salt in it.
When the sauce bubbles add rice, crushed pepper and quickly toss and fry it for 2 to 3 minutes. Check the taste of the rice at this stage and adjust the sauce and salt as per your taste.
Garnish veg fried rice with some spring onions and serve.
