Stuffed Brinjal Fry is a spicy and tasty fry made with coconut, peanuts, spice powders, and onions. It is very famous in Andhra Pradesh and it is called Gutti vankaya there. This Brinjal Fry is spicy, tangy, and delicious. To make this recipe, first coarsely ground sesame seeds, roasted peanuts, onions, and coconut and then stuff this ground paste into the partially cut brinjals. Finally, on a low flame Cook the stuffed brinjals. Adding sesame seeds and roasted peanuts give a unique and great favour to the brinjal.
Stuffed Brinjal Fry can be served with sambar rice, plain rice, and rasam rice. To make this recipe use young and tender brinjals that don’t have seeds. I made this Stuffed Brinjal Fry with 8 brinjals and the stuffing was enough for these 8 brinjals. If you want to make more stuffed brinjals, then increase the stuffing and brinjals accordingly.

Stuffed Brinjal Fry Recipe | How to make Stuffed Brinjal Fry
Stuffed Brinjal Fry is a spicy and tasty fry made with coconut, peanuts, spice powders, and onions.
First, in a pan on a low to medium flame roast peanuts until they start smelling good.
Next, add cumin, chopped coconut, and sesame seeds and saute until the sesame seeds begin smelling good. After sauteing transfer this to a plate and keep aside.
Next, in the pan heat oil and then add sliced onion. Saute until the onions turn golden.
Next, add ginger garlic paste and saute until the raw aroma of ginger and garlic goes away.
Next, switch off the flame and add red chili powder, salt, and coriander powder.
Next, in a blender jar add all the ingredients. If you are adding tamarind paste then add that in this step. I didn't use tamarind instead I used lemon juice in the next step.
Blend into a coarse paste. If you are adding lemon juice then add that in this step and mix well.
Next, wash and partially cut the brinjals and then stuff the coarsely ground paste into the brinjal. Next, heat oil in a pan, add hing, curry leaves, and the stuffed brinjals.
Next, cover with a lid and on a low flame cook the stuffed brinjals. Flip and cook the uncooked sides. If your stuffed brinjals are not tender then sprinkle 1 or 2 tsp water.
After the brinjals are completely cooked, add some coriander leaves.
Serve Stuffed Brinjal Fry with plain rice or sambar rice.
