Masala paniyaram is a soft, crisp and spiced dumpling that is made from the leftover idli batter. Paniyarams are very famous in South India and like other South Indian foods, these  Paniyarams are also healthy like idlis, upma, uthapams, and dosa. These paniyarams are soft like idlis inside and crispy like dosas outside. These paniyarams are also gluten and vegan free. Paniyarams can be made in different varieties, you can make plain paniyaram, sweet paniyaram or this spicy one. There is a special utensil to make these paniyarams which have molds in it. You can get this paniyaram chatti in all Indian markets, you can get both metal or non-stick one.

Masala paniyaram can be served as breakfast or snack. Whenever you have leftover idli batter at home, you can easily make these paniyarams at home. I just add onions and spices to the idli batter and make these spicy paniyarams. You can also add grated carrots to the batter. Another method of making this spicy paniyaram is by tempering the spices and then adding to the idli batter.

Instructions
  1. Take the chopped onions, green chilies, grated coconut, spices, herbs everything and add it to the idli batter.

  2. Mix all these well.

  3. Heat a paniyaram chatti, add 1 tsp of oil or few drops of oil in each paniyaram mould.

  4. Then pour the batter mixture in each mould upto 3/4 of the mould.

  5. Allow to cook for few minutes, then using a wooden skewer or spoon flip carefully and let the other side cook.

  6. Flip once or twice so that paniyaram gets evenly cooked, when the paniyaram turns golden remove in a casserole.

  7. You can serve the paniyaram hot or warm with idli podi or with chutney of your choice.
