Curd sandwich is a very simple and easy sandwich recipe with spiced veggies and curd filling. Sandwiches are loved by everyone, sandwiches can be prepared easily and quickly. Also, while making sandwiches you can try different variations of the stuffing. When you are very hungry and want to prepare something delicious soon then you can make this sandwich but since curd is added to this sandwich don’t pack it in a tiffin box. To make the curd filling, use thick curd or greek yogurt. I usually grill these sandwiches but you can also have these curd sandwiches plain or you can place the filling on a toasted bread and have it. I added raw capsicum, cabbage, carrots and steamed corn kernels for the filling but you can add any veggies like steamed potatoes, steamed green peas etc. All the veggies I added to the filling are raw, only the corn kernels are steamed.

Curd sandwich can be served as a breakfast, brunch or as a snack. I kept this sandwich recipe more international and kept it less spicy but if you want it very spicy in an Indian style then you can add any Indian spices or herbs like green chillies, garam masala, red chilli powder, chaat masala, coriander leaves or mint leaves. You can serve this Curd sandwich with tomato sauce or with any of your favourite sauce and also with banana wafers or potato chips.

Instructions
  1. In a bowl add all the chopped and grated veggies, cabbage, carrots, capsicum, onions, corn kernels.

  2. Next, add curd or yogurt.

  3. Next, add black pepper, dried herbs like oregano, thyme, basil or mixed herbs, red chili flakes or chopped green chilies and salt.

  5. Next, take the bread slices and spread some butter and then add the veggies curd filling.

  6. Cover with remaining buttered bread slices.
