Ingredients:

  • Mushroom – 1 1/2 cup sliced
  • Onions – 3/4 cup chopped
  • Tomatoes – 1/2 cup chopped
  • Ginger – 1/2 inch
  • Garlic – 2 cloves
  • Cashews or Almonds – 6 to 8
  • Oil – 1.5 tbsp
  • Bay Leaf – Small piece
  • Green Cardamoms – 2
  • Cinnamon Stick – 1 small
  • Red Chilli Powder – 3/4 tsp
  • Garam Masala – 3/4 tsp
  • Kasuri Methi – 1/4 tsp
  • Salt – As needed

Method:

Take a blender jar and add 3/4 cup of chopped onions, a half cup of chopped tomatoes, 1/2 inch ginger, two cloves of garlic and 6 to 8 pieces of almond or cashew. Blanch the onions if you have bitterness feel to the raw onions.

Blend them thoroughly to a smooth puree without adding water to it.

Take a pan and heat 1.5 tbsp of oil. Add a small piece of the bay leaf along with one small cinnamon stick and two green cardamoms. Saute them until they begin to sizzle.

Now add the tomato onion puree to the pan. Stir, cover and cook until the mixture thickens.

Add 3/4 tsp of chilli powder along with 3/4 tsp of garam masala to the thickened puree.

Fry them until the mixture gives out a nice aroma. The mixture will begin to leave the side during this step.

Now add 1 1/2 cup of sliced mushroom and sprinkle it with salt as needed.

Stir them for 2 minutes on a low flame.

Add 1/2 to 3/4 cup of water to the masala. Adding water depends on the moisture getting released from the mushroom. Add required amount of water to make a thick gravy.

Cover and cook until the gravy turns thick. Check whether the Mushroom gets cooked. Do not over cook the mushroom. Once they are cooked sprinkle 1/4 tsp of Kasuri Methi. Cover and switch off the stove once cooked.
