Mango Pudding recipe:
- Medium Alphonso mangoes-2 or chopped mangoes of any variety-1.5 cups.
- Sugar- As required.
- Chopped agar agar strands-2 tsp.
- Water-1/3 cup.
- Thick coconut milk-200ml or 3/4 cup.
How to make Mango Pudding:
Peel or chop two medium sized mangoes and put them in a mixer or blender jar.
Next, add sugar to the mangoes as required depending on the sweetness of the mangoes.
Grind the mangoes and sugar until it becomes smooth.
In a bowl take some finely chopped agar agar strands.
Add 1/3 water to the agar agar strands.
Heat that with low to medium flame.
Keep on stirring the mixture until the strands dissolve properly in the water. Switch off the flame when agar agar becomes like thick jelly liquid.
After 20 seconds add this liquid to the jar containing smoothly grind mangoes.
Next, add coconut milk to the jar.
Grind it again until it turns smooth.
Pour this mango pudding in a bowl and cover the top of the bowl and keep it in the refrigerator for 4 to 5 hours until the mango pudding sets.
Serve it as a dessert.
