Egg Sandwich Recipe:
- Boiled Eggs – 3 to 5
- Bread Slices – 6 to 8
- Unsalted butter – As needed
- Coriander Leaves – 1/2 cup
- Mint Leaves – 12 to 15
- Garlic clove – 1
- Ginger – 1/4 inch
- Cumin – 1/2 tsp
- Lemon juice – As needed
- Grated Coconut – 1 1/2 tbsp
- Green Chili Slit – 1
Other Ingredients: (If Desired)
- Bell peppers – 1 thinly sliced
- Onions – Few rings as needed
- Grated Coconut – As needed
- Coriander – As needed
- Lettuce (Optional)
How to Prepare Egg Sandwich:
Boil the eggs in a medium flame. Cover and set aside for 5 to 7 minutes. Once the eggs are boiled, remove the shells under the running water and keep it aside.
While the eggs boil, add the other ingredients to a blender jar to prepare the chutney.
Blend them to a fine paste with the addition of lemon juice and a tablespoon of water. Make sure the chutney is thick. Once it is done, set it aside.
Take a Tawa and heat them. Toast the buttered bread on both the sides. If you consider butter as heavy for kids, then it can be skipped.
Apply the chutney over the bread and cut the boiled eggs. Keep the eggs over the chutney.
Then add the favorite veggies over the eggs. Most times it is the carrot and the onions. You can use any veggies of your choice.
Cover the sandwich with another bread and press it gently with a wooden spoon. You can also add another layer over it.
Cut the sandwich into two halves and serve them hot.
