Chicken Tortilla Soup recipe
- Skinless, boneless chicken breasts, cut into cubes-2.
- Olive oil-1/2 tsp.
- Minced garlic-1/2 tsp.
- Ground cumin-1/4 tsp.
- Chicken broth-2 (14.5 ounces) cans.
- Frozen corn kernels-1 cup.
- Chopped onion-1 cup.
- Chilli powder-1/2 tsp.
- Lemon juice-1 tsp.
- Chunky salsa-1 cup.
- Corn tortilla chips-8 ounces.
- Shredded Monterey Jack cheese-1/2 cup (optional).
How to make Chicken Tortilla Soup
Take a large pot, pour some oil and then add chicken, cook and stir the chicken pieces well over medium heat in the oil for 5 minutes.
Next, Add minced garlic and ground cumin to the chicken pieces and stir well.
Then add the chicken broth, frozen corn kernels, chopped onion, chilli powder, lemon juice, and chunky salsa to it. Reduce heat to low and simmer for about 20 to 30 minutes.
Break few corn tortilla chips into individual bowls.
Then pour the soup into each bowls over the broken tortilla chips.
Garnish the soup with the Monterey Jack cheese and a little sour cream. After garnishing serve it hot.
