Carrot Chutney Recipe
Small Onion- 8 to 10.
Garlic- 2 pods.
Urad dal- 1/2 tsp.
Red chili- 2 to3.
Tamarind- one small piece.
Salt- As required.
Oil- 2 tsp.
Mustard seeds- 1/4 tsp.
Few Curry leaves.
How to make Carrot Chutney
Take a small pan and include pair tsp of oil, Next add urad dal, red chili, and tamarind to it and stir well, roast it till the Urud dal turns golden brown in color. After roasting keep it aside.
In the same pan add some onions and then add garlic. In a low flame stir the onions and garlic well until it turns golden brown.
Chop the carrots finely and add this chopped carrots to the pan. Stir the carrots frequently and cook it on a low flame for 5 minutes.
Let it becomes warm, Put the urad dal, red chili, tamarind, onions, garlic, and carrots along with salt as required in a grinder jar and grind all these well into a fine paste. Add water as required while grinding.
Add some Mustard seeds, and curry leaves to the chutney.
Serve it with dosa, or Idly, You can also serve it with parathas.
